Overview
A pioneer of third-wave coffee, Intelligentsia Coffee was founded in Chicago’s Lakeview neighborhood on October 9, 1995. Roasting on a Probat L12 and developing the Black Cat espresso program, the company went on to became a major influence in the American third-wave coffee movement. Its emphasis on purposeful roasting, precise brewing and origin-focused sourcing helped establish Chicago as an important specialty coffee city.
The company is particularly associated with its proprietary Direct Trade model. Intelligentsia says its buyers visit growers, processors and exporters, maintain lasting producer relationships, purchase multiple quality grades and reward improvements in quality. Its current menu combines seasonally changing single-origin coffees with more consistent blends and espresso offerings, including Black Cat. The overall roasting identity emphasizes clarity, sweetness and relatively light development.
Intelligentsia operates coffeebars in Chicago, Los Angeles, Boston, New York, Austin and Seoul. It also supplies restaurants, hotels, cafés and workplace coffee programs through a national wholesale operation that includes staff education, training labs and on-site support. Home subscriptions include rotating single origins, espresso, classic blends and seasonal selections, with customizable quantities and delivery schedules.
